Trockenbeerenauslese! Queen of wines. We do not manage to harvest Trockenbeerenauslese every year. Here, we always spontaneously react to each vintage; higher acidity mean less alcohol. We also try to find a balance between acidity, residual sugar and alcohol, a balance which gives the wine its quaffability. TBA always needs to ripen in the bottle for a few years.
